"Christmas Cakes"

Christmas is a time to celebrate.

Date Cake:

Ingredients:

a) 1½ cup maida, 1 cup chopped and pitted dates, 1 tbsp butter, 1-cup sugar, 2 tbsps Baking powder, 2 to 3 cups boiling caramel water and 1 tsp. Vanilla.

b) 1 cup white sugar, 1-cup brown sugar, 1 tbsp butter, ½ cup nuts, chopped and 2 cups boiling water.

Method:

Mix the ingredients in (a) together and put in a deep 22×32 cm. Tray. Mix the ingredients in 9b) together and pour over the mixture in the tray. Bake at moderate temperature for 40 to 50 minutes.

Carrot Cake

Ingredients:

3 cups Grated Carrot

• 2 tsp Ground Cinnamon

• 1-1/2 cup Flour

• 1-1/2 tsp Baking Soda

• 1 cup Chopped Walnuts

• 3 Beaten Eggs.

• 1/2 tsp Salt

• 1 tsp Nutmeg

• 1-1/2 Cup Sugar

• 1cup Canola Oil

How to make Carrot Cake:

• Sieve the flour and mix it with baking soda, nutmeg, cinnamon and salt together.

• Blend grated carrots, sugar, oil, some walnuts and eggs.

• Mix dry ingredients into the above mixture.

• Pour it into a pan.

• Cook the mixture at 350 degree F for about 10 minutes.

• Add food color to the cake if needed.

Coffee Crunch Cake

Ingredients:

1 1/2 cups sugar

2 tablespoons sugar

1/4 cup coffee

1/4 cup corn syrup, light

1 tablespoon baking soda

10 in angel food cake

2 cups heavy whipping cream

2 teaspoons vanilla extract

Directions

Combine 1 1/2 cups sugar, coffee and corn syrup in saucepan at least 5 inches deep.

Bring mixture to boil and cook to 310F on candy thermometer or hard-crack stage (small amount of mixture dropped into cold water will break with brittle snap).

Remove syrup from heat, immediately add soda and stir vigorously just until mixture thickens and pulls away from sides of pan.

Mixture will foam rapidly when soda is added.

Do not destroy foam by excessive beating.

Immediately pour foamy mass into ungreased 9-inch square metal pan (do not spread or stir).

Let stand without moving until cool.

When ready to garnish cake, knock hardened mixture out of pan and crush between sheets of waxed paper with rolling pin to form coarse crumbs.

Split cake into 4 equal layers.

Combine cream, remaining 2 tablespoons sugar and vanilla in chilled bowl and beat until stiff.

Spread about 1/2 of cream between layers and remainder over top and sides of cake.

Sprinkle generously with crushed topping.

Refrigerate until ready to serve.
